The new coffees mentioned earlier arrived yesterday. Three of these required immediate attention: Papua New Guinea, Sulawesi Toraja, and decaffeinated Mexican.
I was able to cup the Papua New Guinea yesterday and verify the results today. This lot is brighter than Papua New Guinea often is and is quite sweet. With Papua New Guinea back, I could develop Big Island Blend. Both of these are presently available for sale.
The Sulawesi cupping was a bit unusual as every sample tasted good. This would probably be a good coffee for an inexperienced home roaster to try as it is very forgiving to changes in the roast. I was able to select one sample I prefered. It is a little on the dark side, but the carbony flavor is not dominant. I will verify this soon and Sulawesi should be available before Tuesday.
Two different roasts were desired from the decaffeinated Mexican: a medium roast to sell as Mexican and a dark roast to sell as Vienna Roast. The samples I selected from the new lot are very similar to and a bit smoother than ones from the old lot.
The coffee list now has a new feature. Several coffees now have a (Learn More) link that points to a page with links to other parts of this site that have information on that coffee. Some also point to other sites that are good sources of information for specific farms or the coffee grown in a particular country. Hopefully this will make it easier for you to learn more about your favorite coffees.
